Thai Sweet Potato Bake
A flavorful and creamy Thai-inspired sweet potato bake, perfect for a weeknight dinner.
Ingredients

- β1 can coconut milk
- β1 tsp korean chili flakes
- β2 medium new potatoesdiced
- β2 bake potatoesdiced
- β2 tbsp soy sauce
- β1 tsp brown sugar
- β2 cloves garlicminced
- β1/4 cup green onionschopped

Preheat oven to 400Β°F (200Β°C).

Boil the sweet potatoes until tender, about 15-20 minutes. Drain and set aside.

In a large bowl, whisk together the coconut milk, soy sauce, brown sugar, korean chili flakes, and garlic.

Add the diced new potatoes and bake potatoes to the bowl and stir to combine.

Add the cooked sweet potatoes to the bowl and stir until well coated.

Transfer the mixture to a baking dish and top with chopped green onions.
