Irish Potato Casserole
A comforting and creamy Irish-inspired potato casserole that's perfect for a cozy dinner.
Ingredients

- β1/2 cup All-purpose flourfor thickening
- β1 cup Milkwhole milk or half-and-half
- β1 cup Creamy cheeseshredded or sliced
- β2 tablespoons Butterunsalted
- β1/4 teaspoon Saltto taste
- β1/4 teaspoon Black pepperto taste

Preheat oven to 375Β°F (190Β°C).

In a large saucepan, combine sliced Irish potatoes and enough cold water to cover them. Bring to a boil over high heat, then reduce heat to medium-low and simmer for 5 minutes or until slightly tender.

In a separate saucepan, melt butter over medium heat. Add flour and whisk to make a roux, cooking for 1-2 minutes.

Slowly pour in milk, whisking constantly to avoid lumps. Bring mixture to a simmer and cook until it thickens, about 2-3 minutes.

Stir in shredded creamy cheese until melted and smooth. Season with salt and black pepper to taste.

In a greased 9x13-inch baking dish, arrange a layer of cooked Irish potatoes.

Pour half of the creamy cheese sauce over the potatoes.

Repeat the layers, starting with the potatoes, then the remaining cheese sauce.
