Irish Pork Stew
A hearty and flavorful Indian-inspired pork stew made with tender pork knuckle and rich creamy sauce.
Ingredients
- β1 (1.5 kg) pork knuckle
- β1 medium onionchopped
- β3 cloves garlicminced
- β1-inch piece gingergrated
- β2 tablespoons tomato puree
- β1 tablespoon curry powder
- β1 teaspoon cumin powder
- β1 teaspoon salt
- β1/2 teaspoon black pepper
- β1 cup heavy cream
Instructions

Heat oil in a large Dutch oven over medium heat.

Add onion, garlic, and ginger, and cook until onion is translucent, about 5 minutes.

Add curry powder, cumin powder, salt, and black pepper, and cook for 1 minute.

Add pork knuckle, and cook until browned on all sides, about 5 minutes.

Add tomato puree, and cook for 1 minute.

Transfer the Dutch oven to the oven, and braise the stew at 300Β°F (150Β°C) for 2 hours.

Remove the Dutch oven from the oven, and stir in heavy cream.

Return the Dutch oven to the stovetop, and simmer the stew over medium heat until the sauce thickens, about 10 minutes.

Serve hot, garnished with chopped cilantro, if desired.
