Squash and Butternut Fry
A flavorful and colorful Indian-inspired dish made with roasted butternut and squash. Perfect for a weeknight dinner or a special occasion.
Ingredients
- ●1 medium-sized Butternut squash
- ●1 small-sized Butternut squash
- ●2 tablespoons Vegetable oil
- ●1-inch piece Gingergrated
- ●2 cloves Garlicminced
- ●1 teaspoon Cumin powder
- ●1/2 teaspoon Turmeric powder
- ●1/4 teaspoon Red chili powder
- ●to taste Salt
- ●handful Fresh cilantrochopped

Preheat the oven to 400°F (200°C).

Peel, de-seed, and chop the butternut squash into 1-inch cubes. Place on a baking sheet, drizzle with 1 tablespoon of oil, and roast for 20-25 minutes or until tender.

In a pan, heat the remaining 1 tablespoon of oil over medium heat.

Add the grated ginger and minced garlic and sauté for 1 minute.

Add the cumin powder, turmeric powder, and red chili powder. Stir well for 1 minute.

Add the roasted butternut squash and stir well to combine.

Season with salt to taste.

Garnish with chopped cilantro.
