Käsespätzle - German Cheese Spätzle
A classic German dish from Bavaria, Käsespätzle is a cheesy and delicious alternative to pasta or lasagna. This recipe serves 4-6 people.
Ingredients
- ●1 pound Spätzle (German noodle)
- ●1 cup Croatian cheese (Lika cheese or similar)
- ●2 tablespoons Butter
- ●1/4 cup All-purpose flour
- ●1 cup Milk
- ●to taste Salt
- ●1/2 cup Crescenza cheese (or similar Italian cheese)
- ●chopped (optional) Fresh parsley
Instructions

Bring a large pot of salted water to a boil. Cook the spätzle according to the package instructions until they float to the surface.

In a large skillet, melt the butter over medium heat. Add the flour and whisk together to make a roux, cooking for 1-2 minutes.

Slowly add the milk, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook for 2-3 minutes, until it thickens.

Remove the skillet from the heat and stir in the Croatian cheese until melted and smooth. Season with salt to taste.

Add the cooked spätzle to the cheese sauce and toss to coat.

Transfer the spätzle to a serving dish and top with the Crescenza cheese.

Use a kitchen torch to brown the top of the cheese, if desired.
