Beetroot and Squeak Fritters
A British-inspired fritter recipe made with roasted beetroot and a creamy and earthy filling, served with a side of crispy bubble and squeak.
Ingredients
- ●500g beetrootpeeled and diced
- ●200g squeakmashed
- ●100g creamysour cream
- ●1 bubblelarge, for frying
- ●1tsp andground black pepper
Instructions

Preheat the oven to 200°C (400°F).

Roast the beetroot in the oven for 45 minutes, or until tender.

Mash the roasted beetroot and mix with the mashed squeak and sour cream.

Season with salt and black pepper.

Heat a large frying pan with some oil over medium heat.

Add the large bubble to the pan and fry until crispy.

Using a spoon, drop small amounts of the beetroot mixture into the hot oil, flattening slightly.

Fry the fritters for 3-4 minutes on each side, or until golden brown.
