Classic Algerian Lamb Tagine
A traditional Algerian dish made with tender lamb, flavorful spices, and a rich sauce. Serve with couscous for a hearty and satisfying meal.
Ingredients
- β1 (1.5-2 kg) lamb shoulder
- β2 tbsp olive oilfor browning the lamb
- β1 large onionchopped
- β3 cloves garlicminced
- β2 tsp algerian spice blendor to taste
- β1 tsp cuminground
- β1 tsp corianderground
- β1 tsp paprikasweet
- β1 tsp saltor to taste
- β1 tsp black pepperor to taste
- β1 cup tagine saucehomemade or store-bought
Instructions

Heat the olive oil in the bottom of a clay or ceramic tagine over medium heat.

Brown the lamb shoulder on all sides, about 5 minutes.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the Algerian spice blend, cumin, coriander, paprika, salt, and black pepper. Stir to combine.

Add the tagine sauce and bring to a simmer.

Cover the tagine and cook over low heat for 2-3 hours, or until the lamb is tender.

Serve hot with couscous and garnish with fresh herbs, if desired.
