Vegan Creamy Rice Paella
A plant-based twist on the classic Spanish dish, using Peruvian rice and creamy sauce to create a rich and satisfying meal.
Ingredients
- β1 cup Peruvian rice
- β2 tsp vegan paella seasoning
- β2 tbsp olive oil
- β1 medium onion
- β2 cloves garlic
- β1/2 cup creamy sauce (soy-based)
- β2 cups aerated water
- β1 tsp salt
- β1/2 tsp black pepper

Heat the olive oil in a large paella pan or skillet over medium-high heat.

Add the paella seasoning and cook for 1 minute.

Add the onion and garlic and cook until softened, about 3-4 minutes.

Add the Peruvian rice and cook for 1-2 minutes, until lightly toasted.

Add the aerated water and bring to a boil.

Reduce heat to low and simmer, covered, for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
