Polish Kabocha Squash Tagine

- β1 medium kabocha squashpeeled and cubed
- β1 lb polish sausagecut into bite-sized pieces
- β4 medium cozy carrotspeeled and sliced
- β1 large onionchopped
- β3 cloves garlicminced
- β1 tsp cumin
- β1 tsp paprika
- β1/2 tsp cayenne pepper
- β2 tbsp olive oil
- β2 cups chicken broth

Heat the oil in a large Dutch oven over medium-high heat.

Add the sausage and cook until browned, about 5 minutes.
