Spicy Quinoa Bake
A flavorful and nutritious quinoa bake with the warmth of chilli and cozy spices. Perfect for a weeknight dinner.
Ingredients
- β1 cup quinoa
- β1/2 teaspoon chilli
- β1 tablespoon olive oil cozy
- β1 small onion
- β2 cloves garlic
- β1 cup diced tomato
- βto taste salt
- βto taste black pepper

Preheat oven to 375Β°F (190Β°C).

In a medium saucepan, bring 2 cups of water to a boil.

Add quinoa and reduce heat to low. Simmer for 15-20 minutes or until the water is absorbed.

While the quinoa cooks, heat the olive oil in a large skillet over medium-high heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Stir in the chilli, salt, and black pepper.

Add the diced tomato and cook for 2-3 minutes.

Once the quinoa is cooked, fluff it with a fork and add it to the skillet.
