Kenyan Vegetable Soup
A hearty and comforting soup originating from Kenya, made with a variety of vegetables and spices.
Ingredients
- β2 medium Carrotspeeled and chopped
- β3 medium Potatoespeeled and chopped
- β1 large Onionschopped
- β3 cloves Garlicminced
- β2 medium Tomatoescanned or fresh
- β1 bunch Spinachchopped
- β4 cups Vegetable brothlow sodium
- β2 cups Wateroptional
- β2 tablespoons Olive oilfor sautΓ©ing
- βto taste Saltfor seasoning
Instructions

Heat the olive oil in a large pot over medium heat.

Add the chopped onions and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the chopped carrots and potatoes, and cook for 5 minutes.

Add the canned or fresh tomatoes, vegetable broth, and water (if using).

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.

Add the chopped spinach and cook until wilted.
