Brazilian Apricot Stir-Fry
A sweet and tangy stir-fry featuring Brazilian spices and apricot sauce, served with crispy citrusy chicken.
Ingredients
- β1 1/2 pounds chicken breast
- β1/4 cup apricot puree
- β1 tablespoon Brazilian spices
- β2 tablespoons citrusy soy sauce
- β2 tablespoons stir-fry oil
- β1 cup bell pepper
- β1 cup onion
- β1 teaspoon cumin
- β1 teaspoon paprika
- β2 tablespoons velvety honey
- β1 teaspoon salt
- β1/2 teaspoon pepper

2. In a small bowl, mix together Brazilian spices, cumin, paprika, salt, and pepper.

3. Rub the spice mixture all over the chicken breast.

4. Heat 1 tablespoon of stir-fry oil in a large skillet over medium-high heat.

5. Add the chicken breast to the skillet and cook for 5-6 minutes per side, or until cooked through.

7. In the same skillet, add the remaining 1 tablespoon of stir-fry oil.
