Crispy Peruvian Chicken Salad
A refreshing salad with crispy fried chicken, mixed greens, and a zesty Peruvian dressing.
Ingredients

- β2 tablespoons citrusy vinaigrette
- β4 cups mixed greens
- β1/2 cup red onion
- β1/4 teaspoon crushed black pepper
- β1/4 cup dates
- β1 cup mixed salad greens
- β2 cups romaine lettuce
- β1/4 cup croutons

1. In a large bowl, whisk together citrusy vinaigrette, crushed black pepper, and chopped dates.

2. Add mixed greens, romaine lettuce, red onion, and croutons to the bowl.

3. In a separate pan, heat 1-2 tablespoons of oil over medium-high heat.
