Turkish Lemon Soup
A refreshing and comforting Turkish-inspired lemon soup that's perfect for a light meal or as a starter.
Ingredients

- β2 large potatoespeeled and diced
- β1 medium onionchopped
- β3 cloves garlicminced
- β4 cups chicken broth
- β2 cups water
- β2 tablespoons butter
- βto taste salt
- βto taste black pepper

Heat the butter in a large saucepan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the diced potatoes, chicken broth, water, salt, and black pepper.

Bring to a boil, then reduce the heat to low and simmer for 20 minutes.

Use an immersion blender to puree the soup until smooth.
