Middle Eastern Fatteh with Citrusy Twist
A refreshing twist on the classic Middle Eastern fatteh, topped with a zesty citrusy tabbouleh.
Ingredients
- β1 cup crunchy breadpreferably day-old bread
- β2 cups tabbouleh mixstore-bought or homemade
- β2 tablespoons lemon juicefreshly squeezed
- β1 tablespoon olive oiluse a good quality oil
- β1/4 cup chopped fresh parsleyoptional garnish
- β1/4 cup chopped fresh mintoptional garnish

Cut the crunchy bread into small cubes and toast until lightly browned.

In a large bowl, mix together the tabbouleh mix, lemon juice, and olive oil.

Add the chopped parsley and mint (if using) to the bowl and toss to combine.

In a separate bowl, mix together the toasted bread cubes and the tabbouleh mixture.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Just before serving, sprinkle the chopped parsley and mint (if using) on top of the fatteh.
