Lentil Naengmyeon Stir Fry
A spicy and refreshing Chinese-inspired dish featuring chilled naengmyeon noodles, lentils, and Korean chili flakes.
Ingredients
- β8 oz Naengmyeon noodleschilled
- β1 cup Red or brown lentilsrinsed and drained
- β2 tbsp Vegetable oildivided
- β1 tsp Korean chili flakes (gochugaru)
- β2 cloves Garlicminced
- β1-inch piece Gingergrated
- β1 tsp Sesame oil
- β2 tbsp Soy sauce
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the minced garlic and grated ginger and stir-fry until fragrant, about 30 seconds.

Add the rinsed lentils and stir-fry for 2-3 minutes, until they start to brown.

Add the chilled naengmyeon noodles and stir-fry for another 2-3 minutes, until they are well combined with the lentils.

Add the Korean chili flakes, sesame oil, and soy sauce. Stir-fry for 1-2 minutes, until the noodles and lentils are well coated.

Transfer the stir-fry to a serving platter and garnish with additional Korean chili flakes, if desired.

Serve immediately, garnished with chopped green onions and a sprinkle of toasted sesame seeds, if desired.
