Filipino Rice Cakes with Sweet Skewers
A traditional Filipino street food recipe featuring sweet and chewy rice cakes served with a side of sweet skewers.
Ingredients

- β1 cup Grated coconut
- β1/2 cup Brown sugar
- β1/4 cup Corn oil
- β1 Egg
- β2 Mangodiced
- β1 Pineapplediced

In a large bowl, mix together rice flour, grated coconut, brown sugar, and corn oil.

Add in the egg and mix until a dough forms.

Knead the dough for 5 minutes until it becomes pliable.

Divide the dough into 4-6 equal pieces, depending on desired size.

Shape each piece into a small cake.

Heat a non-stick pan over medium heat and cook the rice cakes for 2-3 minutes on each side.

While the rice cakes are cooking, thread a piece of mango and pineapple onto each skewer.
