Stir Fry with Leafy Greens
A simple and nutritious stir fry made with chewy and earthy mushrooms, leafy greens, and a hint of Chinese spice.
Ingredients
- β1 cup Mushroomschewy, earthy
- β2 cups Leafy greenssuch as spinach or kale
- β2 inches Gingersliced
- β3 cloves Garlicminced
- β2 tbsp Soy sauceor stir-fry sauce
- β1 tbsp Olive oilfor frying
- β1 tsp Chili flakesoptional, for some heat
Instructions

Heat the olive oil in a large skillet or wok over medium-high heat.

Add the sliced ginger and minced garlic and stir-fry for 1-2 minutes until fragrant.

Add the mushrooms and cook for 3-4 minutes until they start to release their liquid and brown.

Add the leafy greens and stir-fry for 2-3 minutes until wilted.

Add the soy sauce and chili flakes (if using) and stir-fry for another minute.

Season with salt and pepper to taste.

Serve immediately over rice or noodles.

Optional: add some stir-fried tofu for extra protein.
