Charred Spanish Tortilla Española
A Mexican twist on the classic Spanish omelette, featuring charred onions and spices.
Ingredients
- ●2 medium Spanish onions
- ●1/4 cup Charred onions
- ●2 Tortilla espanola
- ●to taste Salt
- ●to taste Black pepper
- ●1/2 tsp Cuminground
- ●1/4 tsp Chili powderground
- ●2 cloves Garlic
Instructions

Heat 1 tablespoon of oil in a large skillet over medium heat.

Add the sliced Spanish onions and cook until caramelized, about 20 minutes.

Add the charred onions to the skillet and stir to combine.

In a large bowl, whisk together the eggs and a pinch of salt.

Add the cooked onion mixture, cumin, chili powder, and garlic to the bowl and stir to combine.

Heat a non-stick skillet over medium heat.

Add the tortilla espanola and cook for 2-3 minutes, until the edges start to set.
