- β2 tsp Smoked Paprikaadjust to taste
- β1/2 cup Roasted Red Pepperroasted and diced
- β1 cup Chickpeascanned, drained and rinsed
- β1/2 cup Cucumbersliced
- β1/4 cup Red Onionthinly sliced
- β2 tbsp Chopped Fresh Cilantrooptional
- β1/4 cup Smoked Mozzarella Cheeseshredded

Heat a dry skillet over medium-high heat.

Warm the Ethiopian injera bread for 2-3 minutes on each side.

In a separate pan, heat the smoked paprika and roasted red pepper for 2-3 minutes.

Add the chickpeas, cucumber, red onion, and cilantro (if using) to the pan and cook for 2-3 minutes.
