Italian Charred Veggie Fondue
A twist on the classic Swiss fondue, this Italian-inspired dish incorporates charred vegetables for a smoky flavor. Perfect for a dinner party or special occasion.
Ingredients
- β1 large Charred eggplant
- β1 large Monsoon onions
- β1 baguette French bread
- β3 cloves Monsoon garlic
- β1 cup FondueBechamel-based or vegan alternative
- β1/2 cup Grated ParmesanOptional
- β1/4 cup Fresh parsleyChopped
- βto taste Salt
- βto taste Black pepper
- β2 tbsp Olive oil

Preheat the oven to 400Β°F (200Β°C).

Cut the eggplant into 1-inch cubes and roast in the oven for 20-25 minutes, or until tender and lightly charred.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook for 10-12 minutes, or until caramelized and slightly charred.

In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant.

In a large serving bowl, combine the roasted eggplant, caramelized onions, garlic, and fondue. Stir to combine.

Cut the bread into 1-inch cubes and toast until crispy.

To serve, dip the toasted bread into the fondue and top with Parmesan cheese and parsley, if desired.
