Mexican Gnocchi Casserole
A Mexican-inspired casserole made with gnocchi, potatoes, and charred vegetables. Perfect for a weeknight dinner.
Ingredients
- β1 (16 ounce) package gnocchi
- β2 large potatoesdiced
- β1 cup charred bell peppersdiced
- β1 cup charred onionsdiced
- β1 teaspoon italian seasoning
- β1 teaspoon cumin
- β1 cup cheddar cheeseshredded
- β1 cup salsa

Preheat oven to 375Β°F (190Β°C).

Cook gnocchi according to package instructions. Drain and set aside.

In a large skillet, heat 1 tablespoon of oil over medium heat. Add diced potatoes and cook until tender, about 5 minutes.

Add charred bell peppers and onions to the skillet and cook for an additional 2 minutes.

Stir in italian seasoning and cumin. Cook for 1 minute.

In a large bowl, combine cooked gnocchi, potato mixture, and shredded cheese. Mix well.

Transfer the mixture to a 9x13 inch baking dish.

Spoon salsa over the top of the gnocchi mixture.

Bake in preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
