Saudi Arabian Long Bean Stew
A hearty and flavorful stew originating from Saudi Arabia, made with charred long beans and creamy mushroom sauce.
Ingredients

- ●1 cup mushroomssliced
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●2 tablespoons tomato pastedried
- ●2 cups chicken brothlow sodium
- ●1/2 cup heavy creamdairy
- ●1 teaspoon saltto taste
- ●1/2 teaspoon black pepperto taste

Heat a pan over medium heat and char the long beans for about 5 minutes.

In a separate pan, sauté the sliced mushrooms in a little bit of oil until they're softened.

Add the chopped onion and minced garlic to the pan with the mushrooms and cook until the onion is translucent.

Stir in the tomato paste and cook for 1 minute.

Add the charred long beans, chicken broth, and heavy cream to the pan. Bring to a simmer.

Reduce the heat to low and let the stew cook for 20-25 minutes or until the long beans are tender.

Season the stew with salt and black pepper to taste.
