Caramelized Pepper Crumble Spring Rolls
Crispy spring rolls filled with a sweet and savory mix of caramelized peppers, crunchy vegetables, and a crunchy crumble topping.
Ingredients
- ●1 package Spring roll wrappersusually found in the frozen food section
- ●1/2 cup Caramelized pepperssee note for caramelization method
- ●1/4 cup Vegetable oilfor frying
- ●1/4 cup Crumblefor topping
- ●1/2 cup Mediterranean mixa mix of chopped veggies like carrots, zucchini, and bell peppers
- ●2 tablespoons Soy saucefor added flavor
- ●1 tablespoon Sugarfor balance of flavors

Preheat oil in a deep frying pan to 350°F (175°C).

Prepare the spring roll wrappers according to package instructions.

In a large bowl, combine caramelized peppers, Mediterranean mix, soy sauce, and sugar. Mix well.

Place a spring roll wrapper on a flat surface and add about 1 tablespoon of the pepper mixture to the center of the wrapper.

Fold the bottom half of the wrapper over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

Repeat with the remaining wrappers and filling.

When the oil is hot, add a few spring rolls to the pan (do not overcrowd) and fry until golden brown, about 2-3 minutes.

Remove the spring rolls from the oil and place them on a paper towel-lined plate to drain excess oil.

Repeat with the remaining spring rolls.

Serve the spring rolls hot with the crumble topping sprinkled on top.

To make the crumble topping, mix the crumble with a pinch of sugar and a sprinkle of cinnamon. Bake in a preheated oven at 350°F (175°C) for 5-7 minutes, or until crispy and golden brown.
