Norwegian Cod Cakes with Caramelized Pancake Crust
A crispy Norwegian twist on traditional cod cakes, topped with a caramelized pancake crust for added crunch.

- β1 cup Pancake mix
- β1/2 cup Crispy fried onionsoptional
- β4 Eggs
- βto taste Salt and pepper
- β1/4 cup Breadcrumbsoptional

1. Preheat oven to 400Β°F (200Β°C).

2. In a large bowl, mix together cod, pancake mix, eggs, salt, and pepper.

3. Divide the mixture into 6-8 portions, depending on desired size.

4. Shape each portion into a pattie.

5. Coat each pattie with breadcrumbs if using.

6. Place the patties on a baking sheet lined with parchment paper.

7. Bake for 12-15 minutes, or until golden brown and cooked through.
