Tunisian Lamb Tagine
A classic German recipe with the flavors of Tunisia. Tender lamb is slow-cooked in a rich and aromatic sauce.
Ingredients

- β2 tablespoons TunisianPreserved lemon, chopped
- β2 tablespoons ButteryMelted butter
- β2 cups FluffyRice, uncooked
- β1 cup TagineDried apricots, chopped

Season the lamb with salt and pepper.

Heat the melted butter in a large Dutch oven over medium-high heat.

Sear the lamb until browned, then remove and set aside.

Add the chopped preserved lemon and cook for 1 minute.

Add the uncooked rice, stir to coat with the butter and cook for 1 minute.

Add the dried apricots, cumin, and cinnamon. Stir to combine.

Return the lamb to the pot and add enough water to cover.

Bring to a boil, then reduce the heat to low and simmer, covered, for 1 hour.

Stir in the melted butter and cook for an additional 10 minutes.
