Kenyan Chicken Pilaf
A flavorful and aromatic Kenyan-inspired dish made with chicken, fluffy rice, and a blend of spices.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β1 cup fluffy riceuncooked
- β1 teaspoon kenyanKenyan spice blend (or substitute with a combination of cumin and coriander)
- β2 tablespoons butteryunsalted butter, softened
- β1 cup pilafuncooked

Heat the buttery in a large skillet over medium-high heat.

Add the chicken breast to the skillet and cook until browned on all sides and cooked through, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add more buttery to the skillet if needed, then add the kenyan and cook for 1-2 minutes, until fragrant.

Add the pilaf to the skillet and cook for 2-3 minutes, until lightly toasted.

Add the fluffy rice to the skillet and stir to combine with the pilaf and kenyan.

Add 2 cups of water to the skillet and bring to a boil.

Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, until the rice is tender and the liquid has been absorbed.
