Vegan Buckwheat Bowtie Pasta
A vegan twist on traditional pasta dishes, using buckwheat bowties and rich vegetables.
Ingredients
- ●8 oz buckwheat bowties
- ●1 cup mushrooms (such as cremini)sliced
- ●1/2 cup onionsthinly sliced
- ●3 cloves garlicminced
- ●2 tbsp olive oilfor cooking
- ●2 tbsp tomato pastedried
- ●2 cups vegan vegetable brothhomemade or store-bought
- ●to taste salt
- ●to taste black pepper
Instructions

Bring a large pot of salted water to a boil and cook the buckwheat bowties according to package instructions.

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Add the sliced onions and sauté until they begin to soften, about 5 minutes.

Add the minced garlic and sauté for another minute.

Add the sliced mushrooms and cook until they release their liquid and start to brown.

Add the tomato paste and cook for 1 minute, stirring constantly.

Pour in the vegan vegetable broth and stir to combine.

Reduce heat to low and let the sauce simmer while the pasta finishes cooking.

Once the pasta is al dente, drain it and add it to the skillet with the sauce.

Toss the pasta in the sauce and season with salt and black pepper to taste.
