Indian-Style Lentil Scramble
A vegetarian twist on traditional scrambled eggs, made with red lentils and Indian spices.
Ingredients
- β1 cup Red Lentils
- β1 medium Brown Onion
- β2 Scramble Eggs (or egg substitute)
- β1 tsp Garam Masala
- β1/2 tsp Turmeric
- βto taste Salt
- βchopped (optional) Fresh Cilantro

Rinse the lentils and soak them in water for 30 minutes. Drain and set aside.

Heat oil in a pan over medium heat. Add the chopped onion and cook until softened.

Add the garam masala, turmeric, and salt. Cook for 1 minute.

Add the soaked lentils and 2 cups of water to the pan. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.

In a separate pan, scramble the eggs (or egg substitute).

Once the lentils are cooked, mash them with a fork to create a scrambled egg-like texture.

Combine the cooked lentils and scrambled eggs in the pan. Stir well.

Taste and adjust the seasoning as needed.

Garnish with chopped cilantro, if desired.
