Pan-Seared Snapper with Croatian Salsa
A flavorful and easy-to-make fish dish featuring pan-seared snapper served with a refreshing Croatian-inspired salsa.
Ingredients
- β4 Snapper filletsFresh and sustainable
- β1 cup Croatian salsa (see below for ingredients)Adjust to taste
- β1/4 cup Glassy croatian fishFinely chopped, for garnish
- β1/4 cup Wet brineUsed for marinating snapper
- β2 tablespoons JellyOptional, for thickening salsa
- β4 cups Pot of waterFor boiling snapper before searing

1. Rinse the snapper fillets and pat them dry with paper towels.

2. In a large bowl, mix together wet brine, snapper fillets, and a pinch of salt. Refrigerate for at least 30 minutes.

3. Preheat a skillet over medium-high heat.

4. Remove snapper fillets from brine, shaking off excess liquid.

5. Add 2 tablespoons of oil to the skillet and sear snapper fillets for 3-4 minutes per side.

6. Transfer snapper fillets to a plate and cover with foil to keep warm.

7. In the same skillet, add 1/4 cup of chopped glassy croatian fish and cook for 1-2 minutes.

8. Stir in 1 cup of Croatian salsa and bring to a simmer.

9. Reduce heat to low and let the salsa simmer for 2-3 minutes.

10. To serve, place a snapper fillet on each plate, spoon some salsa over the top, and garnish with additional chopped glassy croatian fish if desired.
