Bittersweet Beetroot Tacos
A twist on traditional tacos, featuring roasted beetroot and a tangy bittersweet glaze.

- β2 oz Bittersweet chocolate
- β1 medium French shallots
- β2 tbsp Olive oil
- β Salt
- β Black pepper
- β4 Tortillas
- β Fresh cilantro

Preheat oven to 400Β°F (200Β°C).

Wrap beetroot in foil and roast for 30 minutes, or until tender.

Melt chocolate in a double boiler. Stir in French shallots.

Once beetroot is cool, peel and slice into wedges.
