Tunisian Lamb Tagine
A flavorful and aromatic North African dish made with lamb, tunisian spices, and tender vegetables.
Ingredients
- β1.5 pounds Lamb shouldercut into large pieces
- β2 teaspoons Tunisian spicesa mix of cumin, coriander, and cinnamon
- β2 Bitter orangesjuiced
- β4 Tender carrotspeeled and chopped
- β1 large Onionchopped
- β2 inches Gingergrated
- β3 cloves Garlicminced
- β2 tablespoons Olive oilfor cooking
- βto taste Salt
Instructions

Heat the oil in a large clay pot or Dutch oven over medium heat.

Add the lamb pieces and cook until browned on all sides, about 5 minutes.

Add the onions, ginger, and garlic and cook until the onions are softened, about 5 minutes.

Add the carrots, Tunisian spices, and bitter orange juice. Stir to combine.

Cover the pot and transfer it to the oven. Braise the lamb and vegetables for 2 1/2 to 3 hours, or until the lamb is tender.

Season with salt to taste.
