Keto Ginger Bitter Toast
A keto twist on traditional toast with the added flavors of ginger and bitter
Ingredients
- β2 tablespoons gheemelted
- β1-inch piece gingergrated
- β1/2 cup bitter melondiced
- β1/4 cup almond flourtoasted
- β1 eggbeaten
- βto taste salt
- βto taste black pepper

Preheat your oven to 375Β°F (190Β°C).

Toast the almond flour in a small pan over medium heat for 2 minutes.

In a separate pan, melt the ghee over medium heat.

Add the grated ginger and cook for 1 minute.

Add the diced bitter melon and cook until tender.

In a bowl, beat the egg and season with salt and black pepper.

Add the cooked bitter melon mixture to the bowl and stir to combine.

Pour the egg mixture over the toasted almond flour and mix well.

Transfer the mixture to a greased loaf pan and bake for 20-25 minutes.
