Uruguayan Roasted Duck
A classic Uruguayan dish with a twist, featuring roasted duck with a crispy skin.
Ingredients

- β1/2 cup bitterUruguayan bitter
- β1 cup roastedroasted vegetables
- β1/4 cup olive oilfor roasting
- β1 tsp saltto taste
- β1 tsp pepperto taste
- β2 cloves garlicminced
- β1/4 cup fresh parsleychopped

Preheat the oven to 425Β°F (220Β°C).

Rinse the duck and pat it dry with paper towels.

Season the duck with salt, pepper, and garlic.

Heat the olive oil in a large skillet over medium-high heat.

Sear the duck on all sides until golden brown, about 5 minutes.

Transfer the duck to a roasting pan and roast in the preheated oven for 20 minutes.

Add the roasted vegetables and Uruguayan bitter to the roasting pan.

Continue roasting for another 20-25 minutes, or until the duck is cooked through and the skin is crispy.
