Mediterranean Lamb Casserole
A hearty and flavorful casserole perfect for a weeknight dinner. The combination of lamb and Mediterranean spices creates a rich and satisfying dish.
Ingredients
- β1 pound Lamb shouldercut into 1-inch cubes
- β2 tablespoons Olive oilfor browning
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 can (28 oz) Dense tomatoescrushed
- β1 teaspoon Mediterranean spicesa blend of oregano, thyme, and rosemary
- βto taste Salt and pepperfor seasoning

Preheat the oven to 375Β°F (190Β°C).

In a large skillet, heat the olive oil over medium-high heat. Add the lamb and cook until browned on all sides, about 5 minutes.

Add the onion and garlic to the skillet and cook until the onion is translucent, about 5 minutes.

Stir in the crushed tomatoes, Mediterranean spices, salt, and pepper. Bring the mixture to a simmer.

Transfer the lamb and sauce to a 9x13-inch baking dish.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 20-25 minutes, or until the lamb is tender and the sauce is bubbly.
