Pan-Seared Duck in Indian Spice Crust

- β1 Bitter gourd (optional)optional for added flavor
- β1/4 cup Crunchy rice flakesfor spice crust
- β2 tsp Cumin
- β1 tsp Coriander
- β1 tsp Garam masala
- β1 tsp Salt
- β1 tsp Black pepper
- β2 tbsp Vegetable oil

Season the duck breast with salt and black pepper.

Mix together cumin, coriander, garam masala, and salt for the spice crust.

Coat the duck breast with the spice crust mixture, pressing gently to adhere.

Heat 1 tablespoon of vegetable oil in an oven-safe skillet over medium-high heat. Sear the duck breast until browned, about 2-3 minutes per side.

Transfer the skillet to the preheated oven and roast the duck for 12-15 minutes, or until cooked to your liking.
