Filipino Chicken Casserole
A flavorful and easy-to-make Filipino-inspired chicken casserole with a crunchy topping.
Ingredients
- β1 pound chicken breast
- β1 medium, sliced bitter gourd
- β1 cup, cubed casserole bread
- β2 tablespoons Filipino seasoning
- β1/2 cup crumbly parmesan
- β1/4 cup coconut oil
- β1 medium, chopped onion
- β2 cloves, minced garlic
- βto taste salt
- βto taste black pepper

Preheat oven to 375Β°F (190Β°C).

Cook chicken breast in a pan with coconut oil until browned and cooked through. Set aside.

In the same pan, add onion, garlic, and Filipino seasoning, and cook until the onion is translucent.

Add sliced bitter gourd and cook until tender.

In a separate bowl, mix together casserole bread, crumbly parmesan, and cooked chicken.

Add the bread mixture to the pan and stir until combined.
