Spanish Omelette with Aromatic Flair

Crack the eggs into a bowl and whisk them together with a pinch of salt and pepper.

Heat a small non-stick pan over medium heat and add a small amount of oil.

Add the onions and sauté until they're translucent and fragrant.

Add the smoked paprika and stir for a minute.

Pour in the eggs and let them cook for a minute.

Use a spatula to gently lift the edges of the omelette and tilt the pan so the uncooked egg can flow underneath.

Once the eggs are almost set, use the spatula to fold the omelette in half.
