Kenyan-Style Meat Stew
A hearty, flavorful stew originating from Kenya, made with tender meat and aromatic spices.

Heat 2 tablespoons of oil in a large pot over medium-high heat.

Add the beef and cook until browned on all sides, about 5 minutes.

Remove the beef from the pot and set aside.

Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.

Stir in the Kenyan spice blend and cook for 1 minute.

Add the tomato paste and cook, stirring constantly, for 1 minute.

Add the coconut milk and beef broth, scraping up any browned bits from the bottom of the pot.

Return the beef to the pot and bring the stew to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the beef is tender.
