Italian Frittata with Citrus and Coconut

- β2 tablespoons Citrus (Orange and Lemon Zest)Use a zester or fine grater for the zest
- β1/4 cup Coconut FlakesDried and unsweetened
- β2 tablespoons Chopped Fresh ParsleyOptional, for garnish
- β1/2 teaspoon SaltUse a flaky sea salt
- β1/4 teaspoon Black PepperFreshly ground
- β2 tablespoons Extra Virgin Olive Oil

Preheat the oven to 375Β°F (190Β°C).

Whisk together the Italian frittata, salt, and black pepper in a large bowl. Set aside.

In a large skillet, heat the olive oil over medium heat. Add the coconut flakes and cook, stirring frequently, until lightly toasted.

Add the citrus zest to the skillet and cook for another minute, stirring constantly.
