Squash and Pilaf Ukrainian Stew

Ingredients

Preheat oven to 400°F (200°C).

Toss the cubed butternut squash with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes, or until tender.

In a large pot, sauté the chopped onion and minced garlic in a little bit of oil until softened.

Add the cooked pilaf, roasted butternut squash, chicken broth, and chopped fresh dill to the pot.
