Greek Chicken Kebabs
A delicious and healthy Greek-inspired dish made with marinated chicken and vegetables grilled to perfection.
Ingredients

- β2 tablespoons olive oil
- β2 tablespoons lemon juice
- β2 cloves garlicminced
- β1 medium crunchy cucumbersliced
- β1 medium crunchy bell peppersliced
- β1 cup greek yogurt
- β1/4 cup dillchopped

Preheat grill to medium-high heat.

In a large bowl, whisk together olive oil, lemon juice, garlic, and a pinch of salt and pepper.

Add the chicken to the marinade and mix well to coat.

Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

Thread the chicken, cucumber, and bell pepper onto skewers.
