Japanese Pork Belly Bento
A delicious and savory Japanese-inspired dish featuring pork belly, served in a traditional bento box.
Ingredients

- ●1 cup japanese riceshort-grain rice
- ●2 tablespoons miso pastewhite miso
- ●2 tablespoons soy saucelow-sodium
- ●1 tablespoon sugargranulated
- ●1/4 cup green onionsthinly sliced
- ●1 tablespoon sesame seedstoasted

Preheat oven to 400°F (200°C).

In a small bowl, whisk together miso paste, soy sauce, and sugar.

Place the pork belly in a shallow dish and brush the miso mixture evenly over both sides.

Let the pork sit at room temperature for 30 minutes.

Place the pork belly in a baking dish and roast in the preheated oven for 20 minutes.

Reduce heat to 325°F (160°C) and continue roasting for an additional 20-25 minutes, or until the pork reaches an internal temperature of 160°F (71°C).

While the pork is cooking, prepare the Japanese rice according to package instructions.

Once the pork is done, let it rest for 5 minutes before slicing into thin strips.

To assemble the bento, place a scoop of Japanese rice in the bottom of a bento box, followed by sliced pork, green onions, and sesame seeds.
