Tunisian Vegetable Bowl
A flavorful and nutritious bowl filled with roasted Tunisian spices and fresh vegetables.
Ingredients
- β2 tsp Tunisian spice blendAvailable at most Middle Eastern markets
- β1 large Zucchini
- β2 Bell peppers
- β1 medium Red onion
- β1 can Chickpeas
- β1 can Canned tomatoes
- β2 tbsp Olive oil
- βto taste Salt
- βto taste Black pepper
- β BowlFor serving
Instructions

Preheat the oven to 400Β°F (200Β°C).

In a large bowl, whisk together the Tunisian spice blend, olive oil, salt, and black pepper.

Add the zucchini, bell peppers, and red onion to the bowl and toss to coat with the spice blend.

Spread the vegetables on a baking sheet and roast in the oven for 20-25 minutes, or until tender.

While the vegetables are roasting, heat the chickpeas and canned tomatoes in a saucepan over medium heat.

Once the vegetables are done, add them to the saucepan with the chickpeas and tomatoes.
