Argentinian Empanadas with Airy Filling
A classic South American dish, these empanadas are filled with a light and airy mixture of cheese, meat, and spices.
Ingredients
- β2 cups all-purpose flour
- β1/2 cup lard or vegetable shortening
- β1/4 cup water
- β1 pound shredded beef
- β1 medium, finely chopped onion
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper
- β1 cup grated cheddar cheese

Preheat oven to 375Β°F (190Β°C).

In a large mixing bowl, combine flour and salt. Gradually add lard or shortening, and mix until dough is formed.

Knead dough for 5 minutes until smooth. Wrap in plastic and refrigerate for 30 minutes.

In a separate bowl, mix shredded beef, chopped onion, salt, and black pepper.

Divide dough into 8 equal pieces. Roll out each piece into a thin circle.

Place 1-2 tablespoons of beef mixture onto one half of each circle. Top with grated cheese.

Fold dough in half and press edges together to seal. Use a fork to crimp edges.
