Thai Chicken and Tom Kha Soup

Ingredients
- β1 lb chicken breastboneless, skinless
- β2 tbsp tom kha pastemake sure it's low-carb
- β4 cups chicken brothmake sure it's low-sodium
- β1 can (14 oz) coconut milkfull-fat
- β1 tsp fish saucemake sure it's low-carb
- β2 tbsp lime juicefreshly squeezed
- β1 tsp chili flakesadjust to taste

In a large pot, heat 2 tbsp of oil over medium-high heat.

Add the chicken and cook until browned, about 5-6 minutes.

Add the tom kha paste and cook for 1 minute, stirring constantly.

Pour in the chicken broth and bring to a boil.

Reduce the heat to medium-low and simmer for 10-12 minutes.

Stir in the coconut milk, fish sauce, and chili flakes.
