Spicy Spanish Courgette Fritters
Crispy courgette fritters with a spicy kick, inspired by French cuisine.

- β1/2 cup flourall-purpose
- β2 eggs
- β2 tablespoons chopped fresh parsley
- β1 teaspoon garlic powder
- β1/2 teaspoon paprika
- β1/4 teaspoon salt
- β1/4 cup crispy fried onions

Preheat the oil to 180Β°C (350Β°F) for deep-frying.

In a bowl, combine grated courgette, flour, eggs, parsley, garlic powder, paprika, and salt. Mix until a dough forms.

Divide the dough into 8 equal portions and shape each into a patty.

Heat a non-stick pan with a small amount of oil over medium heat. Fry the patties until golden brown on both sides.

Increase the heat to high and deep-fry the patties for 2-3 minutes on each side, until crispy.
