French-Style Wine Beef Stew
A classic French-inspired beef stew made with tender beef short ribs, rich red wine, and a variety of vegetables in a flavorful broth.

- β2 medium carrots
- β2 medium onions
- β2 stalks celery
- β1 cup red wine
- β2 cups beef broth
- β2 tablespoons tomato paste
- β2 sprigs thyme

Heat oil in a large Dutch oven over medium-high heat.

Sear the beef short ribs until browned on all sides, about 5 minutes. Remove from heat and set aside.

Add more oil if necessary and sautΓ© the carrots, onions, and celery until softened, about 5 minutes.

Add the red wine, beef broth, tomato paste, thyme, salt, and pepper. Stir to combine.

Return the beef short ribs to the pot and bring the mixture to a boil.

Transfer the pot to the oven and braise the stew for 2 1/2 hours, or until the beef is tender.
